豆瓣8.8分! 突然火了的宝藏级中国美食节目, 居然是个中文十级的歪果仁拍的......

话说,中餐的美味在全世界可是出了名的~

不过,老外们爱吃的中餐,看起来都不大正宗……

 

而最近,一位说的一口好中文的英国小哥“大米”(Jamie Bilbow) 便亲自来到中国,走入乡村寻常人家,向当地的奶奶拜师,学习如何做正宗的中国乡味。

 

他将自己一路上的所见所闻拍成了一部乡村美食综艺《奶奶最懂得》(Granny Knows Best)。

 

目前,这部8集的美食纪录片《奶奶最懂得》上线了5集,在豆瓣上已经get了8.8分的高分。

 

就连《舌尖上的中国》导演陈晓卿都为他打call ↓↓↓

Travel chef Jamie Bilbow heads on an adventure through China's heartland in search of the masters of home cooking. This is a lesson in joy, patience, familial love and what it means to take the bitter before the sweet, taught by the one who knows best: Granny.

为了拜师学习制作家常菜,旅行大厨“大米”踏上了深入中国腹地的探寻之旅。这是充满了欢乐、耐心与亲情的一课,它教会了我们先苦后甜,而给大家上课的正是最懂得一切的 —— 奶奶。

 

For this series, we travelled and filmed for two months across thousands of kilometres in eight different provinces of China: Yunnan, Sichuan, Guizhou, Guangxi, Hainan, Anhui, Zhejiang and Fujian.

在这档系列节目中,我们用两个月的时间游历了数千公里,在中国八个不同省份进行拍摄:云南、四川、贵州、广西、海南、安徽、浙江、福建。

 

We not only covered the preparation of 32 meals, but the unique life stories of 16 characters as well as the culture, history and nature that surrounds them.

我们不光拍摄了32道菜的制作过程,还记录下了16位人物独一无二的人生故事,以及其周遭的文化、历史以及自然环境。

向中国奶奶拜师

 

不难看出,节目中的英国小哥“大米”是个不折不扣的中国通,不光中文十级,筷子也用得溜溜的~

 

蹬三轮、扛面粉、下地摘菜什么的都毫无压力↓↓↓

 

甚至连杵臼这种古法工具都会用!

 

小哥也做得一手好菜,在青山绿水中下厨,真是太令人羡慕了!

 

不过,在探访乡村的时候,他也闹了一些笑话,比如,被奶奶突如其来抡起一锤打面给吓到……

 

也惊叹于奶奶面对油锅起火岿然不动的烹饪气魄……

 

在奶奶们的倾囊教授下,“大米”这个洋徒弟学会了长寿面、丽江糍粑、纳西火锅等种种地道的当地风味……

 

他也结合了当地食材,为奶奶们创作了中西合璧的美味佳肴,比如:法式潘周家鸭丝汤面……

 

冬笋意大利面……

 

葡式土豆甘蓝汤……

 

不过,也有听起来就很“黑暗料理”的菜色乱入,像是这道“巧克力豆皮包花生酱”(???)……

 

面对洋徒弟“大米”新奇菜式,奶奶们的反应也十分有趣,有非常给面子没吃完就说好吃的↓↓↓

 

也有直接吐槽“面太硬了”的(笑)~

 

但毫无疑问的是,小哥在这些旅途中对中国的风土人情都有了更深的了解,和奶奶们也都结下了深厚的情谊。

 

英国人的“中国胃”

 

看到这里,各位一定十分好奇,这位“大米”小哥究竟是怎么学会这一口流利的普通话,又如何对中华美食如此了解的呢?

 

其实,早在七年前,他就在北京胡同口摆小吃摊出名了,还登上了各路媒体……

 

穿着军大衣、胶底鞋的“大米”,在胡同里蹬着三轮车叫卖起他的阿拉伯小吃,还真挺像那么回事(笑)~

 

Among numerous street vendors in Beijing, Jamie Bilbow is the one that makes distinctions. Attired in a green army overcoat and white rubber-soled sneakers which give a tinge of China in the 1970s, the Englishman hawks "pitta and hummus", an Arab snack, on a tricycle that he wheels along Hutongs at the heart of the capital city.

 

据报道,大米1岁时就随父母来到香港并在那里长大,从小对中国美食就不陌生,用他的话说“广东菜吃了一辈子”。后来到伦敦上大学,大二交流到北京留学。这段时间里,他磨练了中文水平,去了中国很多地方品尝各种特色菜品,感受到中餐的多样性,逐渐对中国美食的老手艺产生了兴趣,并希望能在中国成为一名大厨。

 

Born in England, Bilbow moved to Hong Kong with his parents at the age of one. He lived in the city almost 18 years and developed an interest in cooking and Chinese culture.

 

After studying at the School of Oriental and African Studies (SOAS) of the University of London, he came to Beijing in 2011 to pursue his goals: learning to cook Chinese food and becoming a chef in China.

 

说干就干的“大米”在三轮车上开起了他的“大米厨房”,而在他的小吃摊前,也往往排起了长队。

 

随着“大米厨房”的名气也越来越大,“大米”索性租下了鼓楼附近胡同里的一个仓库,开起了餐厅。

 

Wherever he went, his mobile kitchen always drew crowds. After hearing complaints from some customers who missed his food cart, he decided to settle down in a permanent location. In 2012, he rented a warehouse from a friend and rebuilt it into a restaurant in a hutong near the Drum Tower in central Beijing.

 

后来,一所学校邀请他给家长们教授西餐的做法,他的课大受欢迎,从此也打开了他美食新世界的大门。

 

他也开始在微博上po自己的烹饪课信息以及食谱,并吸引了数万粉丝和数百名学生,其中不少是年轻家长和白领。

 

A favorable turn came when a bilingual school headmaster invited him to teach Chinese parents how to cook Western food. Perhaps influenced by his father, a university professor, Bilbow was good at teaching.

 

He posts information for his twice-a-week class on microblog site Weibo, including recipes for pasta, avocado salad and steak. The account has attracted tens of thousands of followers so far and hundreds of students, especially young parents and white-collar workers.

 

“大米”也很喜欢创造中西结合的新菜式。“这就是我的爱好。我喜欢研究中国美食,做中西结合的菜肴。”

 

He has also created new dishes that combine Chinese flavors and Western styles. "That is my hobby. I love to study Chinese food and I like to make dishes with both Chinese and Western elements," he said in Chinese.

 

除了厨师、老师之外,“大米”还是一名主持人,这次的《奶奶最懂得》已经不是他第一次上镜了,之前拍摄《面面大观》就沿着丝绸之路观察美食在东西方交流中的变化。

 

“通过做中西合璧的菜,我们可以了解不同国家对食材的不同看法。比如有的食材在西方是当做香料的,但中国可以把它做成甜品。我呢,毕竟是个外国人,从我的角度去探索这些美食,如果不做这些中西合璧的尝试,会错过一个有意思的点。”

 

而《奶奶最懂得》制片人朱乐贤在接受《新京报》采访时也表示,与大米合作就是希望外来视角和中西文化的碰撞,能给美食纪录片带来不一样的新鲜感。

 

唯美食与爱不可辜负

 

作为美食文化的“宝藏地”,中国也吸引了不少外国电视台前来拍摄,纷纷加入了探寻中国美食的行列,拍起了歪果仁视角下的中国美食纪录片。

 

比如说,1980年日本岩波映画制作所拍的《中国的食文化》,至今仍被中国观众津津乐道。这部纪录片用写实的手法向观众展现了北京、广东、四川、江南四大区域的代表性美食。而正因为这种客观写实的风格,《中国的食文化》不仅是美食纪录片,更是一部中国八十年代风貌的纪录片。

 

2012年BBC拍摄的《发现中国:美食之旅》(Exploring China: A Culinary Adventure),由主厨谭荣辉和华裔主持黄瀞亿带着观众在中国的北京、四川、云南、广东、台湾遍寻美食。

 

2016年BBC出品的《上海之味》(Rick Stein's Taste of Shanghai),则由著名英国美食家Rick Stein带着摄影机的镜头来到上海。在品尝地道上海菜的同时,他还走进渔村、老城区、海鲜市场,以一个英国人的视角,领略并解读他眼中的上海文化。

 

2018年tvN拍摄的《街头美食斗士》第一季,八集里有三集都是关于中国美食的内容,韩国著名美食主持人白钟元在成都、哈尔滨走街串巷,品尝街头美食。

 

被全世界诸多美食纪录片制作方当做标杆的《安东尼·波登:未知之旅》在2014年的第四季和2016年的第八季,主持人安东尼·波登分别探访了上海和四川的美食文化。

 

其中,最令人回味的一幕,是安东尼·波登和扶霞·邓洛普(《鱼翅与花椒》的作者)在川菜大厨兰桂均的“玉芝兰”餐厅品尝精致川菜时的一番对话,始于美食,终于文化。

 

不论是什么样的美食节目,“人”一定都是其灵魂核心所在。毕竟,世间万物,唯有爱与美食不可辜负,人情比美食更有嚼头。 

 

在拍摄《奶奶最懂得》时,大米看到这些中国奶奶,也经常会想起自己的奶奶。他和奶奶之间的温情互动,也让不少人泪目。

 

大米在接受采访时表示,《奶奶最懂得》创作初衷源于他的个人经历。大米家里的老人中三位已经过世,只剩下吉尔奶奶。他现在都记得最喜欢奶奶用自家果园里的苹果做的苹果派。

 

“我意识到那种属于童年时代的味道一去不复返。我希望通过这部纪录片能让观众感受我和你们对童年这份记忆的不舍。相信大家都会经历过这种情感,会与我产生共鸣。”

 

陈晓卿在他的随笔集《至味在人间》有一段话,很适合给《奶奶最懂得》这个节目做个注脚:

 

“我们的肠胃其实都有一扇门,是父母长辈给你的食物编码,无论你漂泊在哪里,门或许已经残旧,但一直等待你童年味觉想象的唤醒。”

 

 

所以啊,这个世界上最好吃的中国菜,大概就在你家的厨房里。
